Fava beans - Broad Windsor

The heirloom fava bean “Broad Windsor” yields 6-8″ pods plump with beans.

Eating the fruits of my labor is always great, and last week was the fava bean payoff.

These were planted in late October, and the harvest from a 2 foot by 3 foot patch filled my picking bucket and then some.When we shelled and par-boiled them to prep them, we ended up with a generous eight cups of beans — enough for multiple meals.

Last night’s dinner included chilled favas in a lemon-garlic sauce with sliced hard-boiled eggs from my friend Teri’s farm. Seemed like the perfect Sunday supper after a warm day in the garden.
